一、厂址选择 根据食品厂建厂的一般要求,除考虑水质、原料、能源、交通运输、周围环境等问题外,还要考虑冰淇淋为冷冻食品, 不宜长途运输,一般就地销售,即要充分估计当地的市场来建厂。
二、设计要求
1. 各单机离墙距离≥1m。
2. 各单机的距离尽可能小,3. 以减少管路的沿程损失,4. 便于接线。
5. 冰淇淋生产车间面积≥60m2 。
6. 速冻库、贮存与包装间距离小。
7. 在车间附近必须有更衣室、消毒间,8. 符合《食品卫生法》。
9. 进水管径≥6”
10. 设有下水道。
DESIGN OF ICE CREAM FACTORY:
I. The following factors should be taken into considerations: water quality, raw materials, energy resources, transportation, environment, etc.
As frozen food, ice cream is often sold locally and not suitable for long distance transportation, thus local market situations should also be considered.
II. REQUIREMENTS OF DESIGN
1. The distance between each equipmment and the wall of the workshop should be no less than 1m.
2. Distance between each equipment should be minimized to reduce the loss of plumb.
3. Space of workshop should be no less than 60m2.
4. Distance between quick-freeze storage, storeroom and packing room should be minimized.
5. Changing room and disinfecting room must be built near the workshop.
6. The diameter of the water inlet should exceed 6", sewer should be also be built. |

Raw Material System:
Mixing, disinfecting and homogenizing are essential procedures in cold drink production. According to traditional processing technology, this requires 3 facilities: mixing vat, cold & hot vat, high temperature homogeneity machine and other supplementary accessories such as tube, valve and pump etc. Production processing is very complicated. In addition, high pressure homogeneity machine has a lot of inevitable limitations: homogeneity valve and sealed units are easily worn and have a typical lifetime of only about 3 months. The spring parts have shorter life and need frequent change. We have developed a new equipment --- raw material processing system. It symbolizes the international advanced standard of combinining mixing, disinfecting, homogenizing together, so it enhances efficiency significantly.

The action principle is that the high-speed reeling rotator creates very high centrifugal force and suddent changes in speed. Work Principle:
The feed liquid of ice cream can be pumped into the Freezing Tube together with air through the Mixing pump with air-in regulator valve. It is mixed by the mixing scraper and frozen by the R22 cryogen in the entresol. Ice cream frozen on the wall is removed constantly by stainless steel knife on the mixing scraper. Finally the feed liquid forms well-organized ice cream with expansion rate under the pressure of the pump and then adjustable constant-pressure valve after it is continuously frozen, scraped and mixed with air.
